Sponge Drops
- Make up the Premier Sponge Mix as per label on the bag
- At the end of mixing time carefully blend in 10% soda flour by hand
- Fill batter into a piping bag with a plain tube and pipe bulbs of batter onto greaseproof paper which has been cut into 10" x 20" pieces allowing room for the batter to flow
- Grip the top ends of the paper and turn quickly over onto caster sugar, then quickly back the correct way up
- Place onto a baking tray and bake at 225°C for approximately 5 or 6 minutes dependant on size, the baked shells should be pale brown in colour
- When cool, spin the shells with a good quality dark bakers chocolate
- Pipe a bulb of raspberry seedless jam onto a shell base which has been inverted and then a rosette of fresh cream on top
- Finish by placing another shell on top
